Vegan chocolate ice cream – The right dessert for a vegetarian

Caster sugar- 175g
Cocoa powder- 50g
Vegan dark chocolate, chopped- 100g
Sea salt flakes- 1 tsp
Vanilla extract- 1 tbsp
Corn flour- 2 tbsp
The method is easy to follow, but you need to do it right, as mentioned below.
Reserve a small amount of coconut milk in a bowl and leave it aside to use later. Pour the rest of the creamy coconut milk into a saucepan. Add the sugar, cocoa, chocolate, sea salt flakes, and vanilla to the pan. Heat the saucepan about 10 minutes until the sugar is dissolved and the chocolate is melted. Then, mix the corn flour with the reserved coconut milk until the mixture gets smooth. After that, pour this into the hot coconut milk mixture and cook it for another 5-10 minutes. Make sure to stir the mixture constantly. Now you have a thick batter that looks like a pourable custard. Remove the mixture from the cooker and strain into a bowl. Cover the bowl properly and leave to cool to room temperature.
After that, pour this cool ice cream mixture into an ice cream maker. Then mix it for 20-30 minutes until you get soft-scoop ice cream. Now your vegan chocolate ice cream is technically ready. Please transfer the ice cream to a freezer-proof container and freeze until ready to serve. The container should be sealed properly. You can keep this up to 3-4 months.
Sometimes you may not have an ice cream maker at home. Therefore pour the mixture into a plastic tub or dish with enough space and make it freeze for 3 hours. Make sure to stir the mixture every 20 minutes to break up any large ice crystals until you get soft ice cream. Then transfer to a freezer-proof sealable container and freeze until ready to serve. Always remember to leave to stand for 10 minutes at room temperature before scooping into bowls or cones.
